Rogue Harvest: Guatemala Gesha Honey
Available August 6-8, 2025
Sourced from smallholder farms in the lush, high-altitude region of San Marcos, Guatemala (1,500–1,650 masl), this exceptional Geisha varietal thrives in rich volcanic soil and humid microclimates near the Mexican border. Grown in small plots with meticulous care, the cherries are processed using the honey method—a hybrid technique where the outer skin is removed but the sticky fruit mucilage remains during drying. This method enhances the bean’s natural sweetness while preserving the clarity and floral complexity Geisha is known for. The result is a beautifully clean, fruit-forward cup with layered elegance and a honeyed finish.
